"South" is a relative term. Do you mean Jackson where the Toms River is nearby and is a stocked/holdover year round trout fishery or more like Cape May which is warmwater and salt? Either way, here's the state's website with lists of where to fish by county:
Below the Manasquan and Toms River there isnt much trout fishing, but still plenty of bass lakes and the bay is pretty good this time of year for salt, but we're still waiting for the fall stripers to arrive in full.. plenty of bunker around though. S Jersey is pretty broad.. where are you?
Where are you from? What are you looking to fish for? Shore or boat? Beginner or expert?
Knowing the above would help because there is a ton of water south of 195. From small farm ponds to big lakes to all sizes of rivers this area has it all.

I live in Mount Laurel, NJ and I have a slogan that you need to get use to. A South Jersey Trout Fishermens best friend is PA Lisence. Honestly it takes me 1 hour to the KLG. It takes me almost an hour to get to the Toms thats just OK. It's easier for me to go into PA and Drive and hour or so and hit some nice waters or go to the KLG and Peaquest. Hope this helps a bit.

Remember that as you drive north on rt. 31 over the SBR on your way to the Pequest, there's another trout river you can try as well right in between the two
A short drive over the Commodore Barry from Woodbury will put you smack dab in Delaware County, PA; my old stomping grounds. While the Delco streams aren't great, they are stocked, (some recently) and they can be scenic in places.
If you decide to go the PA route, pay a visit to or call The Sporting Gentleman in Media, PA. It's a nice shop with knowledgeable people who can direct you to some decent fishing close to their shop.
I live in Deptford and belong to the Nierle chapter; the VP of the chapter lives in Woodbury. We take a number of trips each year to PA locations, plus steelhead and saltwater trips. Great bunch of guys.
There's plenty of lakes and ponds that are trout stocked in south Jersey, however, they don't last long as the LMB and pickerel gobble tham up and get real big......which means, "fly fishing ain't just for trout anymore" as Larry Dahlberg proclaims in his Bass & Panfish video. (See my posts under Warmwater).
Make sure you stop into the Sporting Gentleman as previously suggested by Bamboozle; see Barry there and Mary Kuss, they'll direct you to Ridley Creek and other nearby locations for some nice trout fishing.
