Venison

Ive had venison maybe 5 or 6 times hoping it would taste good at least once but it hasnt happened........I think if you hunted for it and were successful then that improves the taste.........
 
Dont hunt deer myself, but love venison when offered. But as to how it tastes, depends more than most meat on how it is prepared. Just like a cow, carcass must be handled properly or it is less than tasty - and how many of us know zip about doing this? Second, venison is very lean (like duck too, by the way) - so if you cook it any way other than pretty rare, it is tough and sort of tasteless. You need to cook it in such a way that juices are sealed in - searing on a hot skillet with garlic is not a bad start. Try it in a good restaurant first, prepared by pros.
 
Venison's gamie taste usually comes from the deer running and releasing adrenaline after being shot. Another is not dressing and aging it properly.

These if done right, give venison a superior taste, I grew up on it and continue to enjoy the distinct flavor.

Hey, we agree. I love to eat venison, just about any wild game really. I didn't fill my buck tag yet but on Tuesday I dropped a mature, corn-fed Berks County, Pa doe. She dropped almost in her tracks. Not that I've shot a ton of deer (although hopefully that changes now that I finally have deer rifle instead of an old open-sighted shotgun) but in the past I've usually tried to age them a good 2-3 days before heading to the processor. Out of curiosity, I opted to take this one to the processor on the same day just to see if I taste a difference.

I've got three bucks hanging in my shed as I write this since Monday. Aging perfectly for butchering tomorrow with this cool weather. Can't wait for some tasty backstraps:)

Others said it perfectly, cook it hot and fast and at least one level rarer than you like your beef. Actually, no venison should be cooked past medium rare or it gets tough and tastes poor. I like mine rare and my beef medium rare.

I love to eat wild game and the fall is truly a bounty of riches. Grouse, pheasants, woodcock, rabbits and venison have filled my belly many evenings during the past 2 months. Mmm, mmm good.
 
Well, I've had 2 meals (and having a venison steak tonight) from this immediately processed doe and they both tasted great. I had the 2 tenderloins first, delicious. Last night I had a package of the loin chops, Mmm good. Seasoned with a little salt, pepper, herbed olive oil over them in a pan with shitake mushrooms and pearl onions and I poured in some red wine for good measure- Very tasty. Putting a roast & veggies in the crock pot for tomorrow.

Thank you to the Savidge Farm for allowing me to hunt your wonderful property. Thanks to Ruger for making my straight-shooting .270. And most of all thank you Lord for the bounty you have provided to me (please allow me to shoot straight tomorrow on the pheasants.)

Well I'll be PMing you before using my next venison roast. My roast turned out really tasty this weekend though. It was great coming home to it after picking up my brother and sister-in-law at Newark Airport during the storm.
