I'm familiar with the west palm to Stuart areas further north...the ocean gets colder in the winter so tarpon and snook aren't around much but you'll see trout, macks, j crevalle and ladies...that said the keys sounds better and about the same drive.
Another option is peacock bass in the canals...
Simms all day...I don't shit about image, this is also the most economical route.

Yea Lynch taught me the ropes on big Indy leaders...you can start out with 4-5' of 15lb, 4-5 12lb (this is the area your bobber slides and you'll need 1/2" and 3/4"), swivel (I've settled on the smallest spro swivels which are 35 lbs), then 3' of fluoro 6-10 lb(Drennan, seguar, etc are popular)...
